This was terrific, Jess! We enjoyed this immensely and it was a breeze to put together~and gone so fast too! I halved this too, but we could of eaten more! I used some fresh shell pasta, and the taste of the bacon/tomatoes, plus the cheese was terrific! I might add some green onion next time, and maybe a pinch of red peppers flakes, but this is so good, you won't even want to change it!. Loved it! Thanks, Jess! This is so quick, easy and delicious. I needed something fast for dinner tonight so I made this as a side dish with some chicken. I only made half of the recipe. The only shell pasta I have ever seen in my stores are medium and jumbo shells so I used the medium shells. I thought I had more colby cheese than I actually did so I also added some Monterey Jack cheese as well. Thanks for posting! Made for the Aussie/New Zealand 12 Days of Christmas Recipe Swap.
