    I have been trying to cut down on salt and have found this recipe to substitute it in cooking. I really use far too much salt so this sounds like a good sub. I've not made it yet but I will be making it in the next few days as I am missing salt. You can add a tablespoon of black pepper to make it into citrus pepper for meat. You could also use a lemon or an orange. cooking time is the overnight drying time. You can get citric acid crystals in your health food store. Update I have made this now and it is good the dried grapefruit peel has an amazing flavour and aroma much better than lemon. I hope you like it.

    Directions:

      Peel the grapefruit as thinly as possible, then scrape away all the white parts. Dry the peel overnight near a source of heat.

      Grind the peel in a coffee grinder or spice mill, then combine it with the other ingredients.

      Put the mixture into a well sealed bottle and shake well to mix.

      Store in a dry place.
