This is a great salt-n-pepper kugel recipe.
- Peel and grate all vegetables.
- Mix all ingredients and pour into a greased baking dish.
- Bake at 375 degrees for 1 hour.
I made a half recipe in a 9-inch square baking dish. Unfortunately, with no real seasoning amounts, we found this to be fairly bland.
This recipe is advertised as vegan, but it has eggs in it! Tsk tsk! It works okay with egg-replacer, but 2-stars because the *actual* vegan version doesn't come out like ordinary kugel.
