Salt Codfish Balls

"Added for ZWT #9. Salt codfish, a common Norwegian export, is a popular ingredient throughout Europe. Called baccalà in Italy, bacalao in Spain, and bakaliaros in Greece, it forms the base for numerous succulent baked, roasted, steamed, and fried dishes. Serve them with tartar sauce, cocktail sauce, or garlic mayonnaise. Note that salt cod must be soaked at least overnight before cooking."

  • 1 12 cups dried salt cod fish (2 or 3 4-inch-long pieces)
  • 3 large potatoes
  • 1 garlic clove, finely minced
  • 1 teaspoon dried lemon-dill seasoning (or 1 tsp. dried dill plus 1/2 tsp. lemon zest)
  • 2 egg whites
  • canola oil (for frying)

  • Cover the salt cod with water and soak for at least 24 hours, changing the water every six hours or so (it's even better if you can allow it to sit for a few days).
  • On the day of serving, peel and boil 3 large potatoes until very tender, about 30 minutes. Cool slightly, then use a potato ricer or a fork to mash the potatoes finely.
  • Pat the cod dry with paper towels, then use your fingers to shred it into small pieces. Combine the cod with the potatoes; mix in the minced / pressed garlic, lemon-dill seasoning, and egg whites.
  • Lightly flour your hands and form the batter into walnut-sized balls.
  • Heat the canola oil in a deep fryer or heavy pot (with about 3 inches of oil if using a pot) until a drop of water sizzles on the surface. Drop in the codfish balls, five to eight at a time, depending upon the size of your pot. Fry for 2-3 minutes, or until golden brown. Remove from oil and drain on paper towels.

I am a native Californian, born in the Los Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area. I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club. I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun. I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
