This has been a favorite for us for a while now; who knew replacing those awful salty box mixes would be so easy? I highly recommend doubling the recipe if you are serving your family; my DH and I alone can go through the amount this recipe makes. Also, I typically add a little bit of cumin, garlic powder, and chili powder to add a tiny bit more kick.

I make this all the time as a side dish for Mexican type foods. I've used it IN burritos as well. It serves 4-6 as a side dish. Make sure to use a chunky salsa not an esp thin one to prevent excess liquid. This can be made in a crock pot. If you have a large family it's easy to double. If you do make this in the rice cooker make sure to use a US measuring cup for your rice and water and not the cup that comes with your rice cooker (it's not a standard cup). Thanks Mom!

This is great! I cooked my rice a bit longer than the recipe called for to get rid of some excess liquid. I definitely recommend using salsa with a low salt content for this dish. Thanks for sharing!

This is nice because it's so quick and easy, but 1 cup each was way too much, it came out very, very runny. Will try again with less, thanks for the idea.

My favourite way to do 'Spanish' rice!! I actually started doing it this way when I'd made a HUGE batch of salsa that we didn't like because it was kind of sweet. Since then, I use whatever salsa we have in the house because it's just so easy!! I usually substitute chicken broth for the water to give it a bit of a fuller flavour.

This is one of the easiest side dishes I have ever made! And, it tastes terrific! I doubled the recipe and baked it at 350 for about an hour. Delicious! A new favorite! Thanks. Deb!

Yummy & incredibly easy. I've made this many times and use shrimp stock - not water, as a side for seafood (or use chicken broth or beef broth, depending on the entree). I also cook it in the microwave - so much faster

Unbelievable! My hubby does not eat meat and trying to provide tasty meals outside of 'meat and potatoes' is a challenge. Whole roasted salmon basted with Thai dressing and this salsa/rice combo was a hit! Thanks so very much.
