This recipe can be made with a variety of salsas that totally change the flavor. Good served hot or cold

Ingredients Nutrition

  • 1 large eggplant
  • 4 ounces fruit salsa (Mango, raspberry, whatevers preferred, can probably use traditional salsa also)
  • 3 ounces cola

Directions

  1. First peel and diced your eggplant in small cubes, and cook as usual in pan.
  2. On Stovetop mix and heat in pan, pour in cola to partly caramelize the eggplant.
  3. Add Salsa of choice allowing to heat so Eggplant absorbs the flavor.
  4. Gets better as it sits!
