Easy meatloaf with a southwestern twist. Great for a weeknight dinner with a salad and oven fries or baked potatoes.

This is pretty good, and the rolled oats make it a bit different from the average meatloaf. I've made this twice, exactly as written. First I used 93% ground beef, and it wasn't too dry, then I used 83%, figuring I'd get more moisture/fat, and even then it was nice, just a little moister and not dripping with grease like other meatloaves I've tried. Both times I used Pace picante sauce. (I'd never heard of 505 brand, but looked them up and they do look interesting.) Each recipe lasted me for two pretty big platefuls, and I enjoyed it all. Thanks!

  1. Mix all ingredients thoroughly.
  2. Bake in oiled loaf pan at 350° F for 45 minutes.
