Easy meatloaf with a southwestern twist. Great for a weeknight dinner with a salad and oven fries or baked potatoes.
- 1 lb lean ground beef or 1 lb lean ground buffalo
- 1 egg
- 1 cup rolled oats
- 1 cup salsa, from a jar, use your favorite kind (I like 505 brand)
- Mix all ingredients thoroughly.
- Bake in oiled loaf pan at 350° F for 45 minutes.
This is pretty good, and the rolled oats make it a bit different from the average meatloaf. I've made this twice, exactly as written. First I used 93% ground beef, and it wasn't too dry, then I used 83%, figuring I'd get more moisture/fat, and even then it was nice, just a little moister and not dripping with grease like other meatloaves I've tried. Both times I used Pace picante sauce. (I'd never heard of 505 brand, but looked them up and they do look interesting.) Each recipe lasted me for two pretty big platefuls, and I enjoyed it all. We really enjoyed this thank you. I used a hot, spicy salsa which was great. I could suggest lots of other extras to throw in, but I think that would spoil the fact that it only has 4 ingredients and it works.
We liked it! I had never made meatloaf with rolled oats before, and we were pleasantly surprised. Next time I would add some mild chili powder, cumin and cilantro to add a little more flavor. Made for PAC, please see my rating system as I rate tougher than most.
