Salsa-Cream-Chicken

- 4 chicken breasts
- 400 ml heavy cream
- 400 ml salsa
directions
- Mix heavy cream and salsa in a casserole.
- Wash the chicken breasts and dry them with a paper towel.
- Lay them into the sauce and cover them with the mixture.
- Bake 1 hour at 400° F or until chicken is tender and cooked through.
- If you don't eat meat you can substitute the chicken with feta and bake it for approx 20 minutes.
- Serve with white wine, pita bread, rice or/ and fresh garden salad.

This was so QUICK and EASY and GOOD! I cut my chicken into smaller pieces(in half)The chicken came out nice and tender, could cut it with a fork. I used "medium" heat fiesta style salsa and it was just right for those who dont like alot of "heat". I will use "hot" salsa though when its just for me and DH. I cooked up some plain minute rice mixed with some black beans and the sauce was great over it. This is a great QUICKFIX meal when you don't feel like spending time in the kithen.

I'm giving this 5 stars for 2 different families! I made this but used Hunts diced tomatoes instead of salsa because I have a 5 year old who doesn't like peppers of any kind or spicy foods. I also sprinkled the chicken with alot of garlic powder before I put it in the sauce and added a tablespoon or 2 of dried parsley to the sauce. I served it over spiral pasta with a bunch of romano cheese sprinkled on top and my family LOVED this. It was really great and my goodness, what could be easier?!?! My sauce was NOT too thin- it was perfect to put over pasta or rice and my cooking time was 1 hour. My best friend made this exactly as written and her VERY PICKY husband and 3 grown sons loved this and they all gave it 5 stars. She's going to dredge the chicken in bread crumbs next time because she thinks that will be even better! Thank you, Clara12 for a super easy, delicious recipe! We all loved it. Update: I made this again and OMG it is the easiest best chicken EVER. Try it, you'll love it.

This was terrific! I used chicken legs and thighs and doubled the sauce. I used salsa from Frontera (can't remember which one) because I only had a tiny bit of Frontera Chipotle Salsa left in the fridge. I do wish I had made it spicier but our DD hates spicy things. I'm working on her but she's only 11. I also substituted a bit of the cream for some sour cream because others said the sauce was a little thin. But what it lacked in creaminess it more than made up for in flavor.I served it with texmati rice and garnished it with a dollop of sour cream,chopped cilantro, and some of the chipotle salsa from my fridge.I can see where pasta would be very tasty as well.My husband thinks this is one of the best and we wouldn't think twice about serving this to friends or putting it together on a busy weeknight. Thanx Clara for a new favorite in our family!
