Wanted something quick with cheese & salsa. I didn't feel this was 5 stars but I am not weight watching. I used Quaker plain salted rice cakes, organic medium salsa, my cheese was not fat free it was fresh mozzarella which didn't melt very well under a broiler I don't have a microwave as it's not healthy. I used fat free yogurt to be corn free, since I had it on hand.
Love this! I add chopped green onion on top.
Great recipe! It's perfect for people trying to watch their weight (like me!) and it's suuper easy to make! I used Quakes rice cakes, regular salsa, parmasian cheese, and jalepeno soy cheese (I hate sour cream) for an extra cheesey snack. I threw the Quakes into a bowl and poured the salsa on top of them along with a tablespoon of parmasian cheese, microwaving for 30 secs. I then stirred the mixture & added a slice of soy cheese on top, microwaving until the cheese is melted (at least 30 secs). Thanks again for the awesome recipe! =)
This is good, quick, tasty and craving busting. I liked it a lot. I'd never thought to use the microwave to melt cheese. Duh. I have also made a Buffalo like dip for the rice cakes with Frank's Hot sauce and a bit of ff ranch dressing. Thanks! Reviewed and Made for Fall 2007 PAC.
holy crap I do this all the time! Try it with marinara sauce and fat free cheese topped with veggies for your own pizza too. Yum!
