  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, stir cream cheese until smooth.
  3. Stir in salsa, eggs and cheese until well blended.
  4. Generously spray mini muffin pan with vegetable oil.
  5. Fill each muffin cup 3/4 full.
  6. Bake 15-18 minutes or until center is set.
  7. Let cool in pan 5 minutes.
  8. Remove muffins to wire rack.
  9. When cooled, spread tops with small amounts of sour cream and sprinkle with cilantro.
