      Put chicken in baking dish sprayed with cooking spray.

      Combine Diet Coke and salsa; mixing well. Pour over chicken.

      Bake at 350 degrees F. until chicken is done, about 30 to 40 minutes.

      I didn't know what to expect from a Diet Coke/salsa combination, but this was actually quite yummy! I seasoned both sides of the chicken with salt and pepper before I poured the salsa mixture over the chicken. I turned the chicken and basted it half-way through the baking process to help keep the meat moist, and I think I ended up baking it 45-50 minutes altogether. I used Mrs. Renfro's Roasted Garlic salsa because we love garlic. I sprinkled some 2% milk cheddar on top of the chicken for the last 10 minutes of baking. I also tossed the sauce left in the bottom of the pan with steamed green beans for a side dish. Thanks for this delicious idea, Kimberly Mc!
