My sister made this for the family last weekend -- oh my -- it was a feeding frenzy! Don't be frightened by the amount of garlic. The roasting makes it mellow and sweet. The sis served baked cherry tomatoes as a side. Yummy!

  1. Preheat oven to 400 degrees.
  2. Place garlic in ramekin. Pour enough oil over to cover.
  3. Wrap the ramekin in double thickness of foil.
  4. Bake until garlic is very tender; takes about 35 minutes.
  5. Using a slotted spoon, transfer garlic and 1 T. of the oil to a food processor.
  6. Add butter to processor; puree.
  7. Season with salt and pepper.
  8. Preheat oven to 450 degrees.
  9. Place salmon on baking sheet.
  10. Season with salt and pepper.
  11. Drizzle with the lemon juice, then spread on the garlic puree.
  12. Bake uncovered until JUST COOKED THROUGH. Don't overcook your salmon! Should take about 15 minutes but watch carefully.
  13. Sprinkle with rosemary and serve.

Wonderful recipe. I served it to 8 friends - including one who "hates fish", and one who got sick on salmon years ago and who hasn't touched it since. Everyone loved it! Mild and savory - not too "fishy tasting".

Excellent recipe! The roasted garlic really gave the salmon so much flavor. I halved the recipe. It took about 20 minutes, I had a thick one. Thanks! Im glad I picked you for the Pick a Chef game!!!!!
