Salmon with Pistachio Basil Butter

ingredients
- 59.14 ml pistachios
- 10-15 basil leaves
- 3-4 clove garlic
- 118.29 ml butter
- 4.92 ml lime juice
- 118.29 ml white wine
- 4 (680.38 g) salmon fillets
directions
- In food processor, combine butter, pistachios, garlic, basil and lime juice.
- Season with salt and pepper.
- Refrigerate.
- Preheat oven to 400.
- Place salmon in buttered baking dish and cover with wine.
- Season with salt and pepper.
- Bake till opaque--about 10 minutes Place 2-3 tablespoons of butter mixture on each piece of salmon.
- Continue baking until done in center-about 5 more minutes or more (depending on thickness of your salmon).
- Garnish with additional basil leaves.
- Serve with rice or angel hair pasta.

Added a small amount more lime juice (helped with the food processing) and used pine nuts instead of pistachios (that's all I had in the house). I got rave reviews from the family. My daughter couldn't stop shoving salmon in her face! She wanted more and more and nothing else for dinner! Thanks for a great recipe!

One word: AMAZING! I had a few salmon-loving guests over for dinner and "experimented" on them with this recipe. We were all stunned by the awesome flavors! Except for the occasional "mmmm's" we were speechless during dinner ... a sure sign of a great meal. The only change I made was to not cook the salmon in the wine as recommended since I did not want to boil out the Omega-3s from the Alaskan King salmon I used. Thank you Kimke for posting!

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
