Salmon With a Parmesan Crust

"Add an Italian twist to salmon by broiling the fish with Parmesan cheese, basil, pine nuts and breadcrumbs. Serve with new potatoes and steamed broccoli."

  • Place the breadcrumbs, pine nuts, basil, butter and parmesan in a food processor and pulse until just combined.
  • Place the salmon under a moderately hot broiler for 5 minutes
  • Turn the salmon over, top with the breadcrumb mixture and press the fillets down gently with the palm of your hand.
  • Cook for a further 5 mins or until the salmon is cooked through.
  • Serve with new potatoes and broccoli.

I live in Manchester, UK with my fiance and young son. I work at the local hospital in pediatrics and love my job. I also love cooking!! I have a sweet tooth but try and make healthy family meals, I'm not against some lovely treats now and then though :)
