An easy lunch or light dinner that is quick and easy. From BHG. Use any kind of bread or rolls your family likes to assemble the sandwiches
- 1⁄2 cup chopped broccoli or 1⁄2 cup cauliflower
- 1⁄4 cup shredded carrot
- 1⁄4 cup chopped cucumber
- 1⁄3 cup mayonnaise
- 1⁄2 teaspoon dried dill
- 1⁄8 teaspoon pepper
- 7 3⁄4 ounces salmon, drained and slightly flaked (skin and bones removed if necessary)
- green pepper ring
- In a bowl toss together all the vegetables except the green pepper. Stir in the mayo, dill weed and pepper.
- Fold in the salmon. Assemble roll or bread, salmon mixture and green pepper rings into a sandwich.
