Salmon-Potato Patties

"This is a different kind of meatless patty that is easy to make and quite tasty. It is cooked in the oven but I imagine it could be done on a BBQ as well."

ingredients

  • 1 (16 ounce) can salmon, with liquid
  • 2 eggs, well beaten
  • 1 large potato, grated
  • 1 small onion, finely chopped
  • 12 cup fine breadcrumbs
  • 12 teaspoon baking powder
  • 12 teaspoon salt
  • 1 teaspoon hot sauce (optional)
  • 1 tablespoon oil (for frying)
  • 8 buns

directions

  • Mix all ingredients together except oil.
  • Shape into 8 patties.
  • Brown patties in skillet with 1 tbs oil.
  • Bake at 350 degrees Fahrenheit for 25 minutes.
  • Serve on a bun or with a sauce of your choice. Onion is good.

  2. Prepared as written, perfect! We just loved it. I froze individually the leftovers. Just thawed and baked in my toaster oven on stone for a quick weekend lunch. Thanks for another idea using canned salmon, the affordable fish.
     
  3. This was very good, I like the "latke" likeness of this recipe. I was so eager to give this a try that I made it in the morning and had it for breakfast with a fried egg. it would be perfect for a brunch. I am also going to have one with a green salad and vinegarette for lunch. These are perfect for any meal.
     
  4. These were a good, quick meal. We didn't have buns the first night, so we just ate the patties with our fingers. (We grabbed them on our way out the door.) I, too, was worried at the gloppiness of the "patties" before browning, but I forgot about the eggs, which really helped to form the patties and keep them together. We did find the patties to be a bit salty, and I didn't even use a full 1/2 t of salt, but we did use home-canned salmon from a friend, and I don't know if that contributed to the saltiness. I opted not to use hot sauce (we didn't have any). Thanks for posting!
     
  5. The best salmon patty we've tried. It was especially good with EdsGirlAngie's recipe #91231. We made half a recipe with a 7oz can of salmon, baking it in the oven as directed and it worked out just fine. Thanks, Angie, dinner was great.
