    Official Contest Entry: Simply Potatoes 5Fix. My husband and I try to each fish at least twice a week. Salmon is NOT one of my favorites, but I love potatoes ! We came up with this recipe that combines the two ! It is very simple to prepare for a weeknight meal, sophisticated enough for company and simply delicious !

    Directions:

    1. 1
      Dice the scallions and mix with the mashed potatoes. Put the fish fillets on a baking pan that has been well oiled, skin side down. Divide the mashed potato mixture evenly between the 4 fillets and cover the top of the fillets with the mixture. Bake at 350 for about 30 minutes, or until the fish is cooked through (varies slightly due to the thickness of the fish). Turn the oven to broil and sprinkle the Parmesan cheese over the mashed potatoes. Broil for about 5 minutes, until cheese is melted and lightly browned. Serve immediately.
