This was one of Dad's favorites, plus it felt special whenever mom made it because I didn't know of any other families who ate salmon. It was especially good when Mom added a little fat to the skillet to give a crispy golden brown crust to the patties.
- In bowl, mix salmon, egg and however many soda crackers to takes to thicken the mixture. All the juice will become absorbed.
- Fry patties in a skillet with fat in it until golden brown on each side.
My mom makes this EXACT recipe and has been for over 25 years! This is simple but OH so delish!
