My dad used to make these all the time when I was growing up. Quite frankly - I dreaded salmon patties back then - but I love them now! My kids do to as well as DH. My dad cans all his salmon so using homecanned is all I know. I would expect you could use this recipe with store bought salmon as well.
- 1 pint home canned salmon, drain out juice
- 1 egg
- 1⁄2 cup bread or 1⁄2 cup cracker crumb
- 1⁄4 cup milk
- onion powder
- salt and pepper
- 1 1⁄2 teaspoons dried parsley
- Mix thoroughly.
- Shape fish into patties.
- Fry in vegetable oil. Brown on both sides.
- *Serve with rice if desired.
We just had this for dinner. It was easy and tasty. I'll be making these again. Thanks!
I am always on the lookout for a good salmon pattie recipe. This one was quite good and very easy. Canned salmon can be good, if you have the right recipe otherwis it can be just downright nasty, but recipe handles it well.
I used 3 (6 oz.) cans of salmon that didn't contain bones or skin. Very tasty, but a little dry. I wonder if it was because of the kind of salmon I used. Next time, I'd add a little more milk or maybe a drizzle of olive oil. I used crushed whole wheat saltines for my cracker crumbs. I served it with Oven Roasted Vegetables (South Beach) and couscous. Quick and easy!
