A family favorite when I was growing up. A nice change from burgers and quick to whip up after a long day at work.

Ingredients Nutrition

  • 1 (16 ounce) can salmon
  • 1 tablespoon lemon juice
  • 12 medium onion (chopped)
  • 14 teaspoon salt
  • 14 teaspoon black pepper
  • 14 teaspoon dry mustard
  • 1 tablespoon parsley (chopped)
  • 1 extra large egg
  • 2 cups cracker crumbs (coarse crushed)
  • Coating

  • 1 extra large egg
  • 2 tablespoons milk
  • 1 cup cracker crumb

Directions

  1. Flake the salmon into a mixing bowl - remove bones and skin. Be sure to use the liquid from the canned salmon.
  2. Add seasonings, onion, parsley and lemon juice to the salmon. Mix well.
  3. Stir in egg and cracker crumbs to the salmon mixture. Mix until thoroughly moistened.
  4. Shape mixture into patties.
  5. Dip each patty in a mixture of one beaten egg and 2 tbls of milk. Roll or pat the washed patty in a dish of cracker crumbs.
  6. Fry in a skillet on both sides until just golden brown.

Very good salmon patties, the only thing I did differently was to add yellow pepper to the mixture and I used Panko crumbs for rolling them in. I fried them in a combination of butter and oil.
