I've made a lot of Salmon but this was LITERALLY THE BEST Simple Salmon I've made...I did let it marinade for a day...Even though the Butter made the bottom a little dark with a little crisp because I baked instead of grilling this was 1000% delicious...This will be my go to Salmon starting now.... Thanks

I'm from Maryland and I LOVE Old Bay! I usually make a paste of 2 tbsp. soft butter, juice from 1/4 of a lemon, 2-3 teaspoons dried sweet basil and about a 1/4 tsp ro more of Old Bay seasoning on my salmon (which my family and I LOVE) but since I developed high colesterol and GERD I decided to cut out some of the spice that irratates my GERD and some of the fat that adds to my cholesterol. I placed the salmon on a large sheet of aluminum foil, then added a handful of water (in place of butter) sprinkled just a pinch of lemon pepper (in place of my normal lemon juice and Old Bay) and dried dill weed (in place of basil), I sealed the foil tight and baked it at 375 degrees for 20 minutes. I baked some organic baby carrots for about 10 minutes then added yellow squash and about 4-6 ounces water in the bottom of the pan and covered with foil. I usually toss the veggies in equal parts olive oil and butter, season with salt and pepper and bake until my desired tenderness is reached. After removing from oven, I toss the roasted veggies (baby carrots, sweet potatoes and yellow squash) with grated parmesan cheese. But... to my surprise, the lightly seasoned fish was tender and flaky and the plain veggies actually had nice natural flavors, it was all very good.
