Salmon Loaf With Cucumber-Dill Sauce

"I clipped this recipe from the AJC years ago. It is credited to "Our Way Cafe" in Decatur, GA. The original as listed below calls for canned salmon, but I prefer to use fresh salmon (I bake it in the oven, then use a fork to flake)."

  • For salmon loaf:

  • Preheat oven to 350.
  • In a medium mixing bowl, combine salmon, stuffing mix, mayonnaise, onion, celery, green and red bell peppers, egg, salt, jerk seasoning, red pepper and white pepper.
  • Mix well.
  • Shape into shallow 8*8 baking dish.
  • Bake 40 minutes.
  • For Sauce:

  • In a small bowl, combine lemon juice, sour cream, mayonnaise, cucumber, onion and dill.
  • Mix well.
  • Refrigerate until ready to serve with loaf.

  1. I used to make this a long time ago and could not remember where I got the recipe. When I checked the ingredients (herb dressing mix) I knew I had found it! BTW I live in Decatur, Ga and yes it was in the AJC newspaper. Yummy recipe!
