This is a recipe I just came up with because I fancied something along these lines and couldn't find any existing recipes that appealed. It came out well and I think the lemon in the sauce gives a good contrast to the richness of salmon.

  1. Place salmon cutlet on low to medium temperature BBQ plate.
  2. Squeeze one lemon half over cutlet.
  3. Sprinkle with freshly ground pepper.
  4. Cook around seven minutes on one side, flip over and cook around another seven minutes but turn off BBQ plate after a few minutes.
  5. Meanwhile prepare the sauce in a small bowl by adding yoghurt, cumin, garlic and squeezed juice of other lemon half and mix well.
  6. Once the dish is cooked plate up and pour over the sauce.
  7. Add a sprinkling of paprika to garnish and place the coriander and parsley on top.
  8. Serve with a light salad such as mesclun, olives, tomato, mushrooms and grilled zucchini.

We really enjoyed this yogurt sauce, I made some less than wonderful salmon taste quite yummy. It is a nice sauce to make your salmon a "classy" meal.

Fantasic salmon recipe Peter! I made it exactly as posted and served it with a salad of baby greens for a nice light dinner. Thanks for a great meal! Made for Aussie Swap :)

I enjoyed this for dinner tonight. I served it with rice and a salad. I didn't have parsley so used extra cilantro. Thanks Peter!
