ingredients
- 15 ounces salmon
- 2 eggs, beaten (or Egg Beaters will work just as well)
- 1⁄2 cup flour
- 1⁄4 teaspoon baking soda
- 1⁄2 cup buttermilk
- pepper
directions
- Drain salmon.
- Add eggs, flour, and pepper.
- Add soda to buttermilk, then add mixture to salmon.
- Drop by spoonfuls into a skillet greased with non-stick cooking spray.
- Turn as needed until done.
