    Recipe courtesy Paula Deen. One that she used quite a bit in the "old" days! They don't need anything but sometimes we serve them with a horseradish/chive low-fat sour cream.

    Ingredients:

    • 1 (6 ounce) can salmon, flaked
    • 1 egg, beaten
    • 2 tablespoons green onions, diced
    • 1/2 cup breadcrumbs
    • vegetable oil, for frying

    Directions:

    1. 1
      Over medium heat, heat oil in a mdeium skillet.
    2. 2
      Combine canned salmon, beaten egg, green onions and 1/4 cup bread crumbs.
    3. 3
      Form into patties and dust with additional bread crumbs.

      Fry until golden brown, about 2 minutes on each side.

      Wow! These simple cakes were so good, easy and frugal. Everyone loved them - this is huge! As stated, the recipe serves 2 of us as a main dish, so next time I'll double. Thanks for posting this

      Quick, easy, economical and delicious! I normally don't like to eat fried foods because of the free radical damage that happens when the body tries to use oil that has been heated past it's flash point (i.e., when it starts to smoke). This recipe offers a very brief (and therefore healthier) cooking time. I would only use coconut oil to cook these croquettes however, because it holds up best at the high temperature needed for frying. Another way of saying that is coconut oil has a very high flash point. But if any oil starts to smoke -- start over.
