Salmon Caesar Salad

This is a great main dish salad that uses a salad kit and the salmon of your choice. The salad kit is a 10 oz. Caesar Salad that is pre-packaged for convenience.

Ingredients Nutrition

  • lettuce, dressing, croutons and cheese (from a 10 oz. packaged salad kit)
  • 1 small sweet pepper, cut into thin strips
  • 1 small cucumber, quartered lengthwise and sliced
  • 6 ounces smoked salmon, 1 cup total salmon (or poached salmon, canned salmon, skinned, boned and broken into chunks)
  • 12 lemon, cut into 3 wedges

Directions

  1. In a large bowl, combine lettuce and dressing from packaged salad, pepper strips, and cucumber; toss gently to coat. Add salmon and the croutons and cheese from packaged salad; toss gently to combine. Divide among 3 dinner plates. Before serving, squeeze juice from a lemon wedge over each salad.
