Salmon Squares
- 3 eggs
- 473.18 ml milk
- 236.59 ml cheddar cheese, shredded (4 oz)
- 63.78 g can sliced ripe olives, drained
- 59.14 ml green onion, sliced
- 29.58 ml fresh parsley, chopped
- 9.85 ml Worcestershire sauce
- 709.77 ml cooked long-grain rice
- 439.41 g can red salmon, drained and flaked
- paprika

Fresh Zucchini Sauce
- 59.14 ml butter
- 236.59 ml zucchini, shredded
- 59.14 ml green onion, sliced
- 59.14 ml diced pimento, drained
- 59.14 ml all-purpose flour
- 2.46 ml salt
- 2.46 ml seasoning salt
- 1.23 ml pepper
- 414.03 ml milk

For the Salmon Squares:
- Combine the eggs and milk in a large bowl; beat with a wire whisk until blended. Add the cheese, olives, green onions, parsley, and Worcestershire sauce; stir well. Fold in the rice and salmon.
- Spoon the mixture into a lightly greased 11 x 7 x 1 1/2 inch baking dish. Sprinkle with paprika.
- Bake, uncovered, at 325 degrees for 1 hour or until a knife inserted in the center comes out clean. Let it stand 10 minutes before serving. Serve with Fresh Zucchini Sauce.

For the Fresh Zucchini Sauce:
- Melt the butter in a saucepan over medium heat. Add the zucchini, green onions, and pimento, and saute 5 minutes or until the vegetables are crisp-tender.
- Sprinkle flour, salt, seasoned salt, and pepper over the vegetables; stir well. Gradually add the milk, cook, stirring constantly, until the mixture is thickened and bubbly. Serve warm. Makes 2 1/2 cups.

The salmon squares are so good. The sauce has an incredible taste. Both together are great. In the salmon squares I used only 2 eggs (that's the only eggs I had). I omitted the salt in the sauce. I used black olives in the squares. It takes a bit of time to do but not the preparation. It's so easy to mix all the ingredients for the squares. And then the sauce is also easy to do.
