Directions

  1. Preheat oven to 180°C.
  2. Prick potatoes with a fork and place on oven tray.
  3. Cook for 1-1 ½ hours.
  4. Combine salmon, cottage cheese, chives, lemon juice, rind, and pepper into large mixing bowl.
  5. Cut potatoes into quarters and place filling on top of each potato.
  6. Serve with salad.
