Salami and Cheese Picnic Pie

- 2 cups flour
- 1⁄4 teaspoon salt
- 1 tablespoon active dry yeast
- 1⁄2 cup warm milk (105 to 115 degrees F)
- 1 pinch sugar
- 2 tablespoons oil
- 1 egg, beaten
- 2 cups ricotta cheese
- 2 cups grated mozzarella cheese
- 1⁄2 cup romano cheese
- 1⁄2 cup parmesan cheese
- 1 cup salami, finely diced
directions
- Combine flour and salt. Set aside.
- In another bowl, dissolve yeast in the warm milk, sprinkling with a pinch of sugar.
- Add the yeast mixture, along with the oil and egg to the flour. Mix together until dough is soft but not sticky. Set aside.
- To make the filling, combine the remaining ingredients.
- Cut the dough in half. Roll each half into an 11" circle. Place one round into a 9 or 10" cake pan. Fill with cheese mixture. Top with remaining dough. Crimp edges to seal.
- Bake at 350 degrees for 1 hour. Serve warm or at room temperature.
