Salad With Caramelized Slivered Almonds, Mandarin Oranges &

This recipe is for a great salad my friend Katie makes. When I tasted it I just had to have the recipe. I made it for guests and it is just delicious. It is especially refreshing as an accompaniment to steak and chicken. Don't stress as it seems complicated but it is easy really. Just a caution to chefs don't put the avocado and dressing on till right before tossing and serving as the salad will wilt if left too long and avocado will discolor. All the dressing does not all have to go on at once. Toss it with half and taste and then add more to taste. Thanks Katie for sharing.Enjoy! Chef DLH

  1. Combine salad ingredients except avocado.
  2. Prepare the dressing.
  3. Saute almonds and sugar, stirring constantly, until almonds are toasted
  4. Add dressing, almonds and avocado.
  5. Toss to coat salad and serve immediately.

I just had to try this salad because it incorporates some of my fav items; Mandarin oranges, avocado, almonds and Tabasco sauce ~ "yummo's!" ...What a subtle explosion of flavors and textures!! Do serve this up well chilled to get the full impact. I did add a dash or two of extra Tabasco, (personal preference), to compliment the burst of cool mandarin and creamy avocado, Mmmm...Can't wait to make it again. This was quick, easy and had all the ingrediances on hand, (normal kitchen stock). I do believe this is going to be MY #1 favorite salad. Thx for the share ChefDLH

Cut this recipe in half & made it for a homebound neighbor couple, & since they enjoy the taste of avocado, this salad was certainly for them! Won't comment on the avocado, but everything else I test-tasted was great ~ I really like the combo of toasted almonds & mandarin oranges! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
