This bread is excellent! The crust is slightly crunchy and the texture is light. I used a mixture of zucchini and carrots and didn't have any raisins, and it was done baking in 50 minutes. I will be making this again. Thank you for sharing.

  1. preheat oven to 350*.
  2. blend all ingredients in bowl, full thoroughly mixed.,divide batter into 2 greased 9x5 loaf pans --
  3. Bake 1 hour -- let cool 10 minutes.
  4. then remove from pans to cool completley on wire rack.
