From the "Spice of Life" cookbook. Instead of the boiling water and separate bouillon cubes, you may want to use chicken broth. Great with lamb.

This is so good, simple, low fat and tasty that I can't believe it's sat here un-reviewed for so many years. We are currently travelling in the Australian "outback" so I couldn't get currants even if I liked them ;-) I used craisins and would do so again-the hint of sweetness worked really well with the other ingredients.

  1. Saute onions in oil until golden.
  2. Add all other ingredients and simmer covered until all liquid is absorbed, about 12-15 minutes.
  3. Serve.
