Rustic Tuscan Bean Soup

  • Sweat the Carrot, Onion, Celery and Garlic in the Olive Oil for a few minutes. Add a small pinch of Sea Salt at this stage.
  • Next add the Tomatoes, Sage, Thyme, Water and Stock powder and season with a little fresh ground Pepper.
  • Stir in the Cabbage and Kale, cover and simmer for 15 to 20 minutes or until the vegetables are cooked through but still remain vibrant in colour.
  • Add the Beans towards the end and just heat them through in the soup.

Did you know, that you can turn this into a Tuscan Bean Summer Salad? -------- You can, simply by NOT cooking the veggies, using cooked, but cold beans, & NOT using broth. ------Instead, dice and chop all the fresh veggies, ... 1 (40 g) can chopped tomatoes, 2 celery ribs, chopped 1 onion, chopped 1 carrot, chopped 2 garlic cloves, chopped 2 cabbage leaves, chopped, 50 g kale, chopped ...add the cooked, but cold beans (1 (400 g) can cannellini beans (drained) (left unheated) , and simply add a vinaigrette dressing. --------You could even add black, or green olives, that people usually don't use in hot cooking. -------------- You could make up an Italian dressing, with Italian seasoning, and garlic, or put the onion, garlic, and these herbs, (teaspoon thyme leaves 4 sage leaves, chopped) in a vinegar, and olive oil dressing. ---------You could even make a Red Wine Vinaigrette dressing. -------------Also, If you wanted to, you could make this into a Tuscan pasta salad. ------------You could use some interesting shaped Italian pasta, (chill cooked pasta, add canned, or precooked, and chilled beans, and uncooked chopped fresh veggies). -----------Then add a creamy dressing made with vegan mayo (plant based diet also) , and Italian Seasoning. ------If you're not vegan, you can use regular mayo. ------------Any of the 3 ways, would make a great meal for a vegan/plant based diet, because the beans add protein.----------- It's still a great meal, for non vegans, or for Meatless Monday participants. ------------Top it off with a dessert made with grapes, and it's can be something really special. ------------Plus, it could be enjoyed year round, weather it's hot or cold outside.
