This is so good. We made it for our Christmas dinner and everyone really liked it. The pears stay firm, but not too much - and not all mushy. I like that. The craisins are perfect. I think the crust needs some more sugar over the top. The only problem was it took about an hour to cook all the way through. The crust was close to done around 40 minutes, but not the filling. Maybe we just made it too big. It's not that big of a deal though. Very very Good. Made and Reviewed for 123 Hit Wonders Tag - Thanks! :)

This is the best of the Pear Galettes listed here. (compared them all!!!) A Wonderful change from the usual holiday pies, and VERY EASY to prepare. A add chopped almonds to the top, and have added dried apricots, cherries, etc to the pear mix. I also find that the dough should be firm when working with it - or it'll break - so keep it refrigerated until it you're ready to use. And, lastly, you can use a whole beaten egg for the wash. No need to separate or add water. Just use a beaten egg -- results in a nice golden brown crust.
