- 1 cup unsalted butter, room temperature
- 1 1⁄2 cups powdered sugar
- 2 teaspoons vanilla extract
- 1 pinch salt
- 2 cups all-purpose flour
- 1 1⁄2 teaspoons baking soda
- 1 cup fine chopped pecans
- powdered sugar
directions
- Preheat oven to 350°F.
- In a large bowl, beat together butter, ½ cup powder sugar, vanilla and salt until light and fluffy.
- Gradually beat in flour and baking soda until well blended.
- Stir in pecans.
- Roll dough by teaspoonfuls into balls, place 1-1/2 inches apart, on ungreased baking sheets.
- Bake 15 to 17 minutes or until edges begin to brown lightly.
- Remove cookies from baking sheets, cool on racks.
- While warm, toss in sifted powder sugar.
- When cooled slightly with powder sugar.
