From www.russianfoods.com. Sounds refreshing, though I haven't tried it yet.
- 1⁄2 lb radish
- 2 tomatoes
- 4 mint leaves
- 4 scallions, sliced (or 1/3 red onion, sliced thin)
- 4 tablespoons olive oil
- 3 teaspoons lemon juice
- Peel radish and slice finely.
- Slice tomatoes.
- Chop onion and mint finely.
- Combine all the ingredients and dress with oil, lemon juice.
- Season to taste.
Nice & fresh salad! I upped to mint to a good handfull. Thanks for a great recipe!
Added two teaspoons of white vinegar for more acidity... Very refreshing in the summer time!
This is very refreshing, we especially loved the mint flavour. Onion was mentioned in the directions but not the ingredients so I guessed and thinly sliced about a 1/3 of a red onion. Thanks for posting this very light and tasty recipe.
