Adapted from www.russianfoods.com. I haven't tried it yet, but it looks promising. Please let me know what you think.
- 5 cucumbers
- 2⁄3 cup pitted olive
- 3 red pickled peppers
- 1 teaspoon chopped mint
- 1⁄3 cup oil
- 2 tablespoons vinegar
- Cut peeled cucumbers lengthwise, remove seeds, and slice thin.
- Sprinkle with mint, chopped olives, sliced peppers and salt.
- Combine oil and vinegar; Dress salad.
