Taken from a 1970's newspaper, this recipe is on my list to make for the holidays.
- 2 cups pecan halves
- 1⁄4 cup sugar
- 2 tablespoons dark rum
- 2 teaspoons instant coffee
- 1⁄4 teaspoon cinnamon
- 1 dash salt
- Combine all ingredients in a small saucepan and cook over medium heat, stirring constantly, about 15 minutes, until sugar is melted and nuts are well coated.
- Pour out onto parchment paper and separate halves of pecans as they cool.
My DH loves these!! We made batches for friends and he called them "Pirate Nuts" and made tags with pics of pirates and included the recipe. :) Not an overwhelming flavor, but you can taste the rum and coffee. I didn't cook for the full 15 minutes, more like 5-10 at the most - the sugar started to crystalize and I was afraid they'd burn if I let them go longer. They dried nicely. I think they are at their best when still warm! Thanks!
