Rum and Coke Chicken (Crock Pot Recipe)

"I originally got this recipe off the net for a recipe request and have played around with it a bit. It's changed from the original, but good, I think."

  • Place chicken breasts in crock pot.
  • Combine remaining ingredients and pour over chicken.
  • Cook on medium setting for 5-6 hours.
  • Serve with steamed rice.

  1. Not sure what went wrong, made it just like the recipe but didn't get very good results. Not sureif I will try it again. Cinnamon was overpowering and the end result was very strange tasting. Not necessarily bad tasting but very odd.
     
  2. Over-all a good recipe, but the cinnamon and nutmeg were really too much for me. I will cook again, but leave out those two spices.
     
  3. Really easy. I used diet coke and coconut rum. YUM
     
  4. This was delicious! I was skeptical about the cinnamon, but it was really delicious. I baked this in the oven since my crock tends to burn chicken breasts. I used Diet Coke. I also didn't add the red pepper because I forgot...oops! Smelled and tasted wonderful, thanks!
     
  5. I made this for my wife using a whole 3 lb. chicken and it was delicious.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
