      This was good and easy to make. I followed the recipe as written other then I used diced tomatoes instead of rotel. I also used a bit more cheese. I used a cup of the each of the cheeses as we like a lot of cheese. I made this for freezer tag. I made the casserole as directed but after step 4, I froze it. The day I was making, I pulled from the freezer and let thaw in the fridge. I then baked as directed.

      Nice combination of ingredients - like you described - not overly spicy which is a plus for family meals. I think I'll stir the Rotel and mushroom soup together and put them both under the cheese (next to the tortillas) so the soup will incorporate into the other ingredients. In the past year we had discovered the Ranch Style Beans and use them in a lot of dishes. They are great and lend a lot to this casserole. Thanks for something new and delicious.

      Tasty comfort dish! I just used 1 pound of meat since I didn't need quite so many servings. I used chicken soup, rather than mushroom, and put the cheese (Mexican blend) on top instead of under the soup. The reheated leftovers were fantastic! Thank you, Peggy Lynn!!

      Very hearty and delicious dish! It does make a lot and could easily be divided into two portions and frozen. Just thaw and bake as directed. Would make a good family dinner or pot luck dish. DH really loved it, and he's pretty picky. Goes together quickly. Not overly spicy. Like Merlot's said, according to personal preference, you could cut the ground beef down a bit and still have a super dish. Thanks, Peggy Lynn, for another great recipe!

      This is really good, & like she says freezes well so you can take it out of the freezer for unexpected company, but add the soup when you are going to cook it.

      Grat tasting dish. I made two batches for a family get-together. Everyone loved it. I made one batch using diced tomatoes for the more tender mouths. The other I used the Rotel. Neither batch was very spicey. Next time I make it for myself, I will use diced tomatoes with jalapenos. Thank you.

      Dh just went nuts for this. I used one pound ground beef and one pound ground turkey, lowfat or fat free versions of the cheeses and soup, and whole wheat tortillas. I've got enough leftover to freeze for two more meals. My kind of recipe. Thanks, Peggy Lynn.

      This is a great tasting casserole that is so easy to prepare. The only thing I did different was used about 1 1/2 lbs of ground beef instead of the 2 lbs. I can't wait to make another batch to freeze for when we travel. It will be great to serve at our pot luck dinners too. Thanks so much for sharing, Peggy Lynn.
