    These three ingredients make an exceptional dip. The beans add flavor, texture and nutrition. We like to make "macho nachos" using this as the cheese sauce. It tastes good in breakfast burritos too!

      Put all ingredients in a medium sauce pan.

      Cook on low heat, stirring occasionally, until cheese is melted.

      Serve warm with tortilla chips.

      This works well in the crock pot too. Just cook on low for 3-4 hours, stirring halfway through.

      For my party I forgot to add the beans and so served classic Rotel Cheese Dip. Since then I have added beans to the leftovers and it is just as good as the classic AND stretches to dip and dollar with beans. I used Refried Beans Without the Refry for the beans.

      This was different than the usual dip. So easy and fast - also was eaten up fast! Thanks for a new variation - I used both velveeta and also some white cheese. Awesome!!
