- 1 (15 ounce) can black beans
- 1 (10 ounce) can Rotel Tomatoes
- 1 cup shredded zucchini
- 1 head garlic, rough chopped
- 6 ounces sliced portabella mushrooms
- 2 teaspoons extra virgin olive oil
- 1⁄4 lb lean turkey sausage, cut into bite size pieces
- Brown turkey sausage.
- Add olive oil garlic, zucchini, and mushrooms. Saute for 5 minutes.
- Add black beans and Rotel tomatoes. Simmer for 10 minutes and serve.
