  1. Wash and hull strawberries.
  2. Purée in a blender or food processor until smooth.
  3. Pass through a sieve, if liked.
  4. Chill in refrigerator at least one hour.
  5. Pour the chilled strawberry purée into a flute (1/3) and then add chilled sparkling wine (2/3).
