Rosie's Chicken and Pork Adobo

"A great friend and excellent cook gave me this Authentic recipe. I also use low sodium soy sauce, the original recipe does not though."

  • Saute onion, tomato,garlic, bay leaves and peppercorns in oil til onions are soft.
  • Add Pork.
  • Pour vinegar and soy sauce over the top and bring to a boil then simmer about 30 minute covered.
  • Add Chicken and layer remaining onions on top.
  • Simmer until chicken is done.

  1. This was simple and quick to make - always good! I liked this the more I ate it, but found the sauce much saltier then I prefer even with the low sodium soy; I avoided eating the skin and sauce for this reason. I had used up my pork on another dish so this was all chicken. Thanks Elaniemay for sharing, it's alway nice to try something different! Made for ZWT 6 by one of the Unrulies Under the Influence.
     
  2. This excellent! The pork and chicken were very moist. The adobo sauce is delicious. The seasonings are perfect. Definitely one of my favorite recipes on ZWT 6.
     
  3. Great recipe! I followed this as written using regular soy sauce. After cooking the chicken for 30 minutes I replaced it under the broiler to brown for a few minutes. We did not find it salty at all. It was perfect. Thanks for sharing. Made for ZWT 6.
     
  4. Delicious! I've made pork adobo recently, but enjoyed the addition of chicken to the dish. Made with the low sodium soy sauce and did not run into the too salty factor reported by mica4mac. I did skin and brown the thighs before I added them to the dish. Will fix this again, Elaniemay. Thnx for sharing your recipe. Made for the Voracious Vagabonds of ZWT 6.
     
  5. This was good. I doubled the reciepe due to the size of my family. Most found it too salty I will use only half the soy sauce next time.

My Family and I moved to South Africa at the beginning of 2007 to be missionaries. My Husband is the Pastor of a church in Eden Park, a township in the Jo'burg area. We are having a great time. My kids love it (3 of them, 1 born here). We have got to do many exciting things( pet lion cubs, feed giraffes, eat Zebra(gross!)and other meats(Warthog was surprisingly the best, go figure) and swim on a beach with penguins, to name a few). I have always loved to bake but just got into cooking since moving over here. There were a lot of things I couldn't find over here(and still can't) that we were wanting so I started searching for good recipes for everything from sausage, salad dressing and root beer,to enchilada sauce, Macayo's baja sauce(posted), and Applebees hot wings! A fellow missionary turned me on to this site and My husband got me a membership for this last birthday. I am loving it!
