Rosewater and Vanilla Granita

A delicate rose flavoured granita. I use home made vanilla sugar in this recipe. You can add more sugar if you prefer a very sweet granita. You can also add a drop or two of pink food colouring for visual effect. This granita is excellent on its own or served with fruit.

  1. Gently heat the water on the stove. Add vanilla sugar and rosewater and stir until it dissolves. Place in a shallow dish in the freezer for 30-45 minutes. Remove and break up the ice crystals with a fork. Repeat 2 or 3 times until the granita is fully frozen into small crystals.
