Rosemary Roasted Onions

Caramelized onions from the oven...wait until you smell them roasting! I use these onions as a side dish, on pizza, as an omelette filling, on a hot sandwich or just use your own imagination and then share the results with me.

These were really good! We had my dd's b'day party and she wanted hamburgers, plus she loves onions, so I made them to serve on the burgers--Mmmmmmm. All dozen guests thought they were great! So easy to throw together. I didn't bother measuring anything--just threw the sliced onions in a gallon ziplock bag with some olive oil, minced garlic, salt, pepper, and the rosemary. Shook well to combine and then baked as instructed. I kept forgetting to stir the onions, as I was distracted by the party, and they still turned out great. I did stir them a couple times though, and must caution you to watch out for the steam when you pull the pan out to stir--I almost got a nasty burn.

  1. Combine all ingredients in a large roasting pan, tossing to coat with the oil.
  2. Bake at 400 degrees, stirring occasionally for 1 hour and 15 minutes, or until nicely browned.
