  1. Preheat oven to 425. Trim lamb. Cut little slits all over surface of lamb and stuff with slivers of garlic and rosemary.
  2. Rub lamb with olive oil, season with salt and pepper.
  3. Roast at 425 for 15 minutes. Reduce heat to 375 and roast 90 minute longer, or until medium-rare.
