This is my dad's little creation, simple yet fantastic way of sprucing up baked potatoes.

These had a great flavor, but my apple corer seemed too large and I ended up with a lot of waste after coring. I will try these again with something a bit smaller around, (also shorter potatoes) or maybe just cut the potatoes in half, lay the rosemary between the halves, and put them back together and wrap tightly with foil. Made for Fall 2011 PAC game.

  1. Scrub each potato.
  2. Using an apple corer, cut a hole lengthwise through the potato.
  3. Rub some olive oil on the potato skins.
  4. Sprinkle on some salt and pepper to taste.
  5. Insert a small sprig of rosemary into the holes you cut in the potatoes.
  6. Wrap in foil, bake in a 400 degree oven for about an hour, or BBQ for about the same amount of time, just as you would normally.
  7. Serve and enjoy!
