Rocky Mountain Brownies (Light)

Big hit with the kids... and their parents! Not too sweet and very easy to bake. A R. Reisman Recipe.

  1. Preheat the oven to 350°F Spray a 8-inch square baking dish with vegetable spray.
  2. In a bowl and using a whisk, beat sugar, cocoa, applesauce, oil, egg, vanilla and yogurt.
  3. In another bowl, stir together flour and baking powder. Stir the mixture into the applesauce mixture just until everything is combined. Pour the batter into a prepared dish.
  4. Bake in the centre of the oven for 20 minutes. Sprinkle with marshmallows and chocolate chips. Bake another 10 minutes.
  5. Let the dish cool on a wire rack.

Granted I didn't have eggs (substituted one tbsp corn starch and three tbsp. of water) these had great appearence buy somewhat mushy texture, I'd probably do more oil less applesauce next time or try to find a sub for the yogurt. Super healthy though and that was what I was going for, honestly I bet the guys at work won't really notice!

Terrific brownies. I adjusted this to be even mroe low fat and calorie by using 1/2 c brown sugar splenda blend for the sugar, and using 1/4 cup applesauce for the oil as well. Moist and yummy with great flavor.

I really liked them moist, which was how they came out. The marshmellows were nice and gooey after 10 minutes, which was also to my liking, but they came out a bit messy on my chin and clothes :P, but all in all I really enjoyed them.
