Rock Cakes

"The name describes the appearance of the cakes, not the texture!! A soft spongy centre with a crusty texture outside. I loved making these as a child, and loved eating them too!!"

  • Preheat oven to Gas 6/400F degrees.
  • Grease a baking sheet.
  • Put flour, salt, spice, butter/margarine in processer/mixer and mix.
  • Add egg and sugar and mix again.
  • Add enough milk/water to bind the mixture (if the mixture is too soft the cakes will flatten and spread).
  • FOLD in the dried fruit.
  • Put on the baking sheet in small rough heaps.
  • Bake for 15 minutes.

  1. I've never eaten rock cakes, but I've heard them mentioned in British TV programs many times. They are very tasty! Not too sweet. I used 1 oz. craisins, 1 oz. raisins, and 1 oz. diced apricots. We couldn't taste the spices at all, though we did smell it while they were baking. I would add vanilla extract. This recipe is VERY quick to put together (I used a stand mixer). I was a little surprised that there was no measurement for the milk/water - I put about 1/3 cup milk and 1/4 cup water in a cup, and poured it in a little at a time, and I had a few TB left in the cup when the dough came together. They did not spread very much. I got 22 little cakes. Next time I think I'll use half brown sugar and half white, and use chopped walnuts, dried cherries and chocolate chips instead of all fruit. Great recipe for a quick treat to add to a brunch table or with afternoon tea, and easy to change to suit your tastes. Thank you Angela!

  4. Fantastic! Easy and so good! Didn't have any mixed spice so I used ginger, nutmeg and cinnamon and can't make them quick enough. Thank you for posting this. Never found a better recipe for an old favourite.
